Spaghetti alla carbonara

There are a lot of different recipes of "carbonara", but I'll write the one I enjoy most
It is not the original one (I use smoked pancetta instead of guanciale and parmesan instead of pecorino), but I like it very much!

You can use all kinds of pasta, in my opinion spaghetti are the best for this recipe, but all are ok

Ingredients for 4 people:
1/2 kg spaghetti (or other pasta)
3 eggs (4 if you want a stronger taste of egg)
100-150 g smoked pancetta (cubed)
salt, pepper, oil
grated parmesan

1.Cook the pasta into a pot with salted water
2.Meanwhile, put into a mixing bowl all the eggs and the parmesan, and mix well with a fork
3. just 3-4 minutes before pasta is cooked, put into a a pan some oil (not too much, you don't have to cover pancetta! just fry it) and the smoked pancetta, and fry the pancetta until it's crisp and golden
4.When pasta is cooked, drain it into a colander, then put it quickly back into the pan, add the mixed egg and the fried pancetta with oil... and mix!!!
You can see that the egg, in contact with hot pasta, change
5.Serve with pepper and eventually extra grated parmesan

Wow! Thanks a lot Shamy4106, I appreciate that recipe given by a REAL Italian member, as I used to do this meal quite often at home, and what we (French, and moreover Normands) use to add in this recipe is... milk cream.

But we use less eggs, and usually add parmiggiano reggiano that is sold in our supermarkets already grated.

Pancetta isn't that easy to find in France, we've usually got some pork breast in cubes...

So I'll try YOUR recipe next time, I'm sure it will be better than the one I usually do. It won't be that easy though to get a nice piece of parmiggiano cheese, but searching well, I will find some!

Now I'm hungry after I read your recipe! lol

Ahah, I'm happy you enjoyed it.
I look on internet, on foreigner websites, and all recipes about carbonara are different from the real one.. if you want, I'll post it
About ingredients.. sometimes I also use parmigiano already grated, it's not a problem (sometimes I use grana padano, it's similar, but I think more difficoult to find abroad).. uh, and I often use less eggs, 2-3 to maintein lighter the recipe

Tell me when you'll try it!

Oh yeah, I know "grana padano", we can find it easily in the supermarket as well as "parmiggiano Reggiano"

One of my favorite meals (I love Italian meals, Italian cooking is one of the best in the world from my opinion) is "Osso Bucco".

Is it true that what is generaly served in Italia with this meal is pollenta? We French often use rice or spaghettis with osso bucco, much more rarely pollenta...

ahah! I also love the "osso buco"! But I don't eat the marrow (i don't like it) :S
And yes, we eat it with polenta (I love it!!!)
I'm from Bergamo, and polenta is a very typical dish, we eat it with a lot of different meat
My dad also prepare osso buco with couscous ^_^ so I can understand how is your recipe with rice I think!

And, I'm not good enough in cooking to know the recipe, but when I'll come back home I can ask to my dad for you, if you want ^^

Spaghetti Carbonara are my favourite food! But my mother doesn't cook them like you. She uses the spaghetti (of course), 2 eggs, liquid cream, cheese "filatto" and bacon. And they're so delicioussss...!!

one more ingredient you can put is just a couple of spoons of pana (in English it might be milk-cream or something like it). I like it better that way, but it becomes a lot heavier
