The "High Quality" mode is a feature the user may request in order to have his/her text translated exclusively by an expert for the target language. That's why you don't manage to do the translations targeted that way.
A user becomes an expert after proving being skilled enough for a language and when the experts for that language think they need help and suggest someone's name.
I'll have to find out if at the moment the site is in need of another Danish expert, but I'm glad to know you are willing to help.
