Sorry for the delay of my answer. The orach is a plant which was used - and it is still used today in some countries- to make cooked food. I will send you the link to wikipedia. This text is about the confusion some people used to make between this plant and spinach, because their leaves are very similar.

Wow - thanks for the clarification - I was really lost! Now I have one more question: Which word did you translate with the word "represents"? I cannot find that in the original Latin. It looks like "is seen as our spinach" to me.
