1- Una vez cortadas las berenjenas en rodajas las dejamos escurrir para que se vaya el amargor y las salamos.
Las dejamos reposar durante 30min.

2- Cogemos los calabacines y los cortamos en rodajas

3- Ponemos los ajos enteros, el tomate, un poco de aceite de oliva, azúcar y albahaca en un cazo y lo cocemos a fuego lento durante 20 minutos. Salpimentamos.

4- En una sartén con aceite freímos las rodajas de berenjena (vuelta y vuelta) y a continuación las de calabacín hasta que cojan un poco de color.

4- In a frying pan with some oil, we fry the aubergine slices slightly (on both sides), and then the courgette slices until they begin to turn brown.

Hi Lein,

The original is a bit weird, not the most common way of explaining a recipe (we take, we put, etc.)

But since you chose a quite literal translation, there are a few corrections:

When we have cut the aubergines into slices ---> Once the aubergines were cut into slices

and cook this ---> and cook them

We season it ---> We add salt and pepper

turning them over frequently ---> slightly on both sides (this change will require a different syntax )
"In a frying pan, we fry the aubergine slices (slightly on both sides)..."

they begin to change colour ---> they begin to brown

I don't agree. We cook all this (everything we have put in the pan).

We season it ---> We add salt and pepper

turning them over frequently ---> slightly on both sides (this change will require a different syntax )
"In a frying pan, we fry the aubergine slices (slightly on both sides)..." (I took 'slightly' out of the brackets as otherwise it would give the impression 'slightly' refers to 'on both sides' instead of 'fry'.)

they begin to change colour ---> they begin to brown ('to turn brown' is more commonly used than 'to brown'.) My first version is also commonly used but since you seem to prefer 'brown'...
