1- Una vez cortadas las berenjenas en rodajas las dejamos escurrir para que se vaya el amargor y las salamos.
Las dejamos reposar durante 30min.

2- Cogemos los calabacines y los cortamos en rodajas

3- Ponemos los ajos enteros, el tomate, un poco de aceite de oliva, azúcar y albahaca en un cazo y lo cocemos a fuego lento durante 20 minutos. Salpimentamos.

4- En una sartén con aceite freímos las rodajas de berenjena (vuelta y vuelta) y a continuación las de calabacín hasta que cojan un poco de color.

The original is a bit weird, not the most common way of explaining a recipe (we take, we put, etc.)

But since you chose a quite literal translation, there are a few corrections:

We season it ---> We add salt and pepper

"In a frying pan, we fry the aubergine slices (slightly on both sides)..." (I took 'slightly' out of the brackets as otherwise it would give the impression 'slightly' refers to 'on both sides' instead of 'fry'.)

they begin to change colour ---> they begin to brown ('to turn brown' is more commonly used than 'to brown'.) My first version is also commonly used but since you seem to prefer 'brown'...
