1- Once the aubergines are cut into slices, we let them drain to get rid of the bitter taste and we put some salt on them. We let them stand for 30 minutes.
2- We take the courgettes and cut them into slices.
3- We put the whole garlic bulbs, the tomato, some olive oil, sugar and basil in a saucepan and cook all this on low heat for 20 minutes. We add salt and pepper.
4- In a frying pan with some oil, we fry the aubergine slices slightly (on both sides), and then the courgette slices until they begin to turn brown.
