"seasoned" is an adjective usually given to people meaning "experienced".
For an establishment it may sound better something like:
traditional, reputed, renowned...

What do you think?

well i was gonna use the word "experienced" believe it or not, but i know there has to be a better word, the word should describe the establishment as old, experienced, well formed, well established ... what else?
