Hello,
I would like to thank you for giving me the opportunity to continue my studies.
I am a 45-year-old single mother, and my lifelong wish has been to complete an academic degree.
I intend to study for a degree in the Humanities and Social Science fields, which will allow me to contribue to the community with better knowledge and qualifications.
A scholarship like the one I received, awards students an opportunity to enrich themselves, regardless of their age, marital status, background, religion, or gender, and through this, to enrich their close environment and society at large.

I don't know if that's formal usage but it's very common these days. I just googled "give back to the community" (without an object) and got 38M results (and that's without 'giving back', just 'give back'). You can change it to something else if you feel the need, as long as it means that she will be able to contribute her new skills and knowledge to the community.
Re #1, this is a letter thanking someone for a scholarship, which was requested three weeks ago. I have this hunch that the request was filled in a different way long ago, and she won't really be interested in our queries at this stage. In any case, if you feel it's more correct, you can use obtain instead of complete. I really don't think it matters.
