De to "ting" vi har på hovedet kan staves på to måder i flertal: "ørene" eller "ørerne"
Hvis vi taler om penge staves det kun på en måde i flertal: "ørerne"
Jeg tror du mener "ørerne" ? |

"Spar på ørene og lad daleren rulle" is an idiom, more precisely "spar på skillingen og lad daleren rulle". The English idiom is "Be penny wise and pound foolish"
Actually the second part of this scentence is equal to the first part:
Spar på ørene og lad daleren rulle eller
spar på småmønterne og lad de store mønter rulle

You could have bothered yourself to use punctuations in the text you submitted in first, in order to separate the two sentences in it.
If the translation were as messy as the way you typed the source-text, I guess you'd be at least as confused as now anyway.

If you need only "save the little coins and let the big ones roll", then you should take only the 2nd part:
"Parvii pretii nummos serva, concede ut magni pretii nummi volvantur"
You can use this sentence for your tatoo.
