"like I remember you" would sound better as:
"(exactly) the way I remember you"

"fine/just fine" does not refer to the looks, but to a state of spirit or condition. I guess the person means that the other 'looks well' not that s/he is feeling well, in good condition, etc

We could also put it as: "You look well"
