The french original text is not very clear. I think the person who has written this text doesn't know french very well and maybe the true meaning of the sentence is something like "What we find, is never what we are looking for".
But I'm not sure... let's wait for Francky's opinion.

Yes, it could be what you said, JP, but it isn't actually that obvious to guess what the requester heard or read, so that Ian's version is closer, because of the first part of the sentence, which says "ce qu'on veut trouver..."
Angelisi, where did you get this text from, did you hear it or did you read it somewhere?
