If you prefer rhymes, I suggest:

Wishing you good luck
That all my words can tell
On this peaceful Christmas Eve
And for all the year as well.

However, the meaning is slightly different.
But I feel like a great poet...

"We wish you one small thing/ this one thing - success in everything you do" - literally.
I'm not sure the meaning of "the only thing we wish you" is positive enough.
luck is good enough for "success" and sounds better.

By the way the first rhymed version sounds neat
