In the second sentence, "but" not "and" and where did the word "nevertheless" come from?

There's something not right in the last sentence,just southern sauces or (Mediterranean sauces?) and where did the word occasionally appear from?

@sagittarius, why a cap "d" at "dip"? (it's a kind of a bowl into which people dip some vegetables (cut in sticks).
