"Stary" literally means "old" but we also use it to say "guy, man, friend, fellow" in an informal conversation as this one.

What I meant was if in Spanish "tío" is the correct word to express it.

In Portuguese is like saying:

Well, I would insist on "tío" as it seems to be more commonly used "como apelativo para designar a un amigo o compañero". "Viejo" sounds more like talking about the parents.

It's really possible it's actually about the parents. It looks like an ironical retort, "nie, Twój/mój stary" is often used this way in Poland.
