I need your confirmation whether the meaning for this translation is ok.

"I love you Katrine, my precious darling! You are everything for me, I can not live without you my dear, you are superior than everything. I really miss you very much when we are not together."

Not quite. I would say this is closer to the Danish meaning:

I love you Katrine, my dearest friend! You mean everything to me, I would not be able to live without you my dear because you mean more to me that most people. I really miss you when we are not together.

bedsteveninde literally means "best (female) friend". When written like this (bedsteveninde) it usually implies that the writer is female too.
