Is it "human's hands" or "man's hands"?

I thought it now, and I think "human's hands" would be more correct because here it is told about any person in general.

But the line doesn't sound well this way.
I think it refers to humanity as a whole and "man" (or humanity itself) is used in a case like this.

"Everything (All) is in the hands of man and man is in the hands of women"

Is that the meaning?
