This is a common idiom and each language has its own way to express it. We can't translate the words exactly as they appear in one language into another. To say that someone is our favorite, the most loved or appreciated, in English the correct word is this (apple), as in Spanish the word would be "niña" (girl).

And in English (don't ask me why ) it is singular "eye".
