I guess it was to be "Enjoy freedom"... Am I right? If so, I'm not sure we could use the verb "carpere" (to pick, to pluck..) here just like in "carpe diem".  You know "carpe diem" is an idiomatic expression and, in my opinion, it doesn't work the same way with different nouns.
I would rather say "libertate fruere".
But I can be wrong. Let me ask somebody's advice.
